Malolactic fermentation

The free-run wine remains in vats or in barrels; a second fermentation then happens, the malic acid is converted into lactic acid due to certain bacteria and the result is a smoother wine.


This is the selection of the fruiting canes or « astes » to limit the yield in the following harvest.

Earthing up

Building up earth around the base of the vine in order to protect it from frost.


After pruning, the remaining astes are attached.
